Ingredients

  • 8 large apples, (such as Granny Smith, Honeycrisp, Golden Delicious, Jonagold), peeled, cored and chopped into small pieces Footnote
  • 2 tbsp. freshly squeezed lemon juice tips & tricks
  • 1 cup brown sugar, such as demerara
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/8 tsp. ground ginger
  • 3 tbsp. cornstarch
  • 3 tbsp. butter, cubed tips & tricks
  • 1 1/2 cups sharp Cheddar cheese, grated
  • 2 large (9-inch) pie crusts see Recipe
  • 1 tbsp. milk, for brushing

Directions

  • Preheat oven to 450ºF.
  • Core and peel the apples and cut them into small pieces; add to a large bowl. Add lemon juice and mix well. Add the rest of the ingredients and stir gently until well blended.
  • Place a pie crust into a greased and floured pie plate.
  • Add the apple mixture and place another crust on top. Crimp the edges, brush on a little milk and make a few small incisions to let the steam escape. Add a pie crust shield or foil to protect the crust.
  • Transfer the pie to the preheated oven and bake for 30 minutes or until golden brown. About 10 minutes before the end, remove the pie crust shield.
  • Served warm with Vanilla Ice Cream.
