Apple Cheese Pie

- 8 large apples, (such as Granny Smith, Honeycrisp, Golden Delicious, Jonagold), peeled, cored and chopped into small pieces Footnote
- 2 tbsp. freshly squeezed lemon juice tips & tricks
- 1 cup brown sugar, such as demerara
- 2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/8 tsp. ground ginger
- 3 tbsp. cornstarch
- 3 tbsp. butter, cubed tips & tricks
- 1 1/2 cups sharp Cheddar cheese, grated
- 2 large (9-inch) pie crusts see Recipe
- 1 tbsp. milk, for brushing
Preheat oven to 450ºF.
Core and peel the apples and cut them into small pieces; add to a large bowl. Add lemon juice and mix well. Add the rest of the ingredients and stir gently until well blended. Place a pie crust into a greased and floured pie plate. Add the apple mixture and place another crust on top. Crimp the edges, brush on a little milk and make a few small incisions to let the steam escape. Add a pie crust shield or foil to protect the crust.
Transfer the pie to the preheated oven and bake for 30 minutes or until golden brown. About 10 minutes before the end, remove the pie crust shield.
Served warm with Vanilla Ice Cream.
