Ingredients

  • 1 12-inch Foolproof Cauliflower Pizza Dough, baked see Recipe
  • 1/4 cup Greek pesto sauce see Recipe
  • 1 large chicken breast (about 1 cup), poached and cubed tips & tricks
  • 1 can (6 oz.) artichoke hearts, rinsed, drained and cubed
  • 2 tbsp. sun-dried tomatoes, well drained
  • 2 tbsp. shallots, thinly sliced (Lyonnaise cut) tips & tricks
  • 1/8 tsp. red pepper flakes, or to taste
  • 2 cups sharp white Cheddar cheese, grated
  • 1/2 tbsp. chopped parsley, for garnish tips & tricks

Directions

  • Preheat oven to 425ºF.
  • Spread pesto, leaving about ¼-inch from the edge of the pizza crust. Evenly add chicken cubes, artichoke hearts, sun-dried tomatoes, shallots, red pepper flakes, and cheese.
  • Transfer to the preheated oven and bake for 10 to 12 minutes or until the cheese is melted.
  • Remove from the heat and let it rest for 5 minutes before adding chopped parsley.
