Ingredients

  • 1/2 cup cold water Footnote
  • 2 1/2 cups low-sodium chicken broth
  • 12 ounces (about 2 breasts) chicken breasts, cut in 1-inch pieces
  • 1 1/4 cups uncooked orzo pasta
  • 1 cup frozen peas, slightly thawed
  • 1/4 tsp. dried rosemary
  • 1/4 tsp. dried basil
  • 1/4 tsp. dried oregano
  • 1/8 tsp. cayenne pepper, or more to taste
  • 1/2 tsp. freshly ground black pepper (I always use mixed peppercorns)
  • 1/2 cup grated Asiago cheese, or more to taste, divided

Directions

  • In a 4-quart pot, combine water and broth (*see footnote); bring to a boil.
  • Add chicken and pasta; bring back to a boil. Reduce the heat to medium-low, add peas, stir and simmer gently for 12 minutes; stirring occasionally.
  • Add rosemary, basil oregano, cayenne and black pepper; cook for another 3 minutes.
  • Turn off the heat and stir in ¼ cup cheese; taste and adjust seasoning if necessary. Serve immediately and sprinkle on more cheese.

Notes

Footnote: For even more flavor, use all chicken broth and skip the water...
