Ingredients

  • 1/2 tbsp. olive oil tips & tricks
  • 1/2 tbsp. sesame oil
  • 1/4 cup water
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup freshly squeezed lemon juice tips & tricks
  • 1 tbsp. hoisin sauce
  • 1 tbsp. Worcestershire sauce
  • 1 tsp. freshly ground black pepper (I always use mixed peppercorns)
  • 1 tsp. brown sugar, such as demerara
  • 1/2 tsp. cayenne pepper, or to taste
  • 4-5 large cloves garlic, pressed
  • 4 large pork chops of 1/2-inch thick Footnote
  • 4 large button mushrooms, washed and sliced
  • 2 tsp. cornstarch (mixed with 1/2 cup cold water)

Directions

  • In a shallow oven safe baking dish, combine oils, water, soy sauce, lemon juice, hoisin, Worcestershire sauce, black pepper, sugar, cayenne and garlic; stir to combine.
  • Add pork chops, and turn to coat evenly.
  • Cover and refrigerate for at least 6 hours (*see footnote).
  • Preheat oven to 375ºF.
  • Remove the marinated pork chops and transfer them to the preheated oven. Bake for 35 to 40 minutes, basting the meat often with the marinade.
  • Remove from the oven and place the chops on a warm plate; set aside.
  • Carefully pour the marinade into a small saucepan. Bring to a simmer and add mushrooms. Cook 5 to 8 minutes or until the mushrooms are cooked.
  • Pour in cornstarch mixture, stir for 1 minute or until the gravy thickens.
  • Spoon gravy over the pork chops and served immediately with mashed potatoes, steamed veggies and crusty bread.

Notes

Footnote: If the pork chops are thicker, marinate them longer
