- 3 large russet potatoes, peeled and washed
- 1 large sweet potato, peeled and washed
- 2 generous pinches coarse sea salt
- 4 tbsp. butter tips & tricks
- 1/2 cup light sour cream, or to taste
- 1/4 cup 35% heavy cream
- 1/2 tsp. garlic salt, or to taste
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 2 large green onions (white and green parts), chopped
- 1 1/2 tbsp. fresh parsley, chopped tips & tricks
Add potatoes to a large pot of salty boiling water. Cook until tender, about 20 minutes.
Drain well and transfer them back to the pot.
Add butter and mash them until well incorporated. Add sour cream, heavy cream, garlic salt and freshly ground black pepper; mash until mixed. Taste and adjust if necessary.
Blend green onions in the potato mixture and sprinkle with fresh chopped parsley.
