Mixed Mashed Potato

Ingredients

  • 3 large russet potatoes, peeled and washed
  • 1 large sweet potato, peeled and washed
  • 2 generous pinches coarse sea salt
  • 4 tbsp. butter tips & tricks
  • 1/2 cup light sour cream, or to taste
  • 1/4 cup 35% heavy cream
  • 1/2 tsp. garlic salt, or to taste
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 2 large green onions (white and green parts), chopped
  • 1 1/2 tbsp. fresh parsley, chopped tips & tricks

Directions

  • Add potatoes to a large pot of salty boiling water. Cook until tender, about 20 minutes.
  • Drain well and transfer them back to the pot.
  • Add butter and mash them until well incorporated. Add sour cream, heavy cream, garlic salt and freshly ground black pepper; mash until mixed. Taste and adjust if necessary.
  • Blend green onions in the potato mixture and sprinkle with fresh chopped parsley.
