Pimento Cheese Sandwich

Ingredients

  • 1 jar (4 oz.) diced pimiento, drained
  • 1/2 cup mayonnaise see Recipe
  • 1/2 cup sharp Cheddar cheese, grated
  • 1/2 cup Monterey Jack with Jalapeño Pepper cheese, grated Footnote
  • 4 ounces (1/2 package) light cream cheese, softened
  • 1 tsp. red onions, finely chopped
  • 1/4 tsp. garlic powder
  • 1/16 tsp. cayenne pepper, or to taste
  • 1/16 tsp. ground Himalayan sea salt, or to taste
  • 1/16 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)
  • 3-4 dashes hot sauce such as Cholula®, or to taste

Directions

  • In a mixing bowl, combine all the ingredients. With a hand mixer, process until the mixture is very well combined and spreadable, stopping to clean the sides of the bowl.
  • Cover with plastic wrap making sure it touches the surface to prevent from drying out and chill for 30 minutes before making the sandwiches.

Notes

Footnote: I like a little zip in my sandwich therefore I use Monterey Jack with Jalapeño Pepper but you can always just use the regular one.
