Ingredients

  • 1/4 cup butter, melted and divided
  • 1/2 tbsp. freshly squeezed lemon juice tips & tricks
  • 4 large fish fillets, rinsed and patted dry
  • 4 tbsp. Creole seasoning mix (about 1/2 tbsp. per side), or as needed see Recipe
  • 1 1/2 tbsp. canola oil, or more as needed tips & tricks

Directions

  • Preheat BBQ between 450ºF to 500ºF. Place a cast-iron griddle or skillet on the grill. Close the lid and heat for 10 to 15 minutes.
  • In a small saucepan over medium-low heat, melt butter. Add lemon juice and stir well.
  • Brush melted lemon-butter on each fillet and coat all with Creole seasoning mix. Flip the fillets and repeat the steps; reserve the remaining butter for later.
  • Brush the griddle with canola oil and place the fillets. Grill for 2 to 3 minutes or until almost black.
  • Flip and brush some of the reserved lemon-butter on the cooked side. Grill for another 2 to 3 minutes or until the internal temperature reaches 145ºF. Serve immediately.
