Apricot Jam

Ingredients

  • 2 lbs. apricots, washed and patted dry
  • 2 cups granulated sugar
  • 1/2 cup orange juice
  • 2 tbsp. freshly squeezed lemon juice tips & tricks
  • 1 tbsp. orange zest
  • 1 1/2 ounces orange liqueur such as Triple Sec, Grand Marnier, or Cointreau optional

Directions

  • Cut apricots in half and discard the stones. Cut them in cubes and transfer them to a large pot.
  • Add sugar, orange and lemon juice, and orange zest. Set the heat to medium, stir well until the ingredients are blended and the sugar is dissolved.
  • Simmer for 15 minutes and skim off any foam if needed; stir often.
  • Five minutes before time is up, add some orange liqueur. Stir well and simmer for the remaining time.
  • Fill up the sterilized jars, leaving ½-inch head space. Seal and transfer jars into a boiling water bath – make sure the jars are covered with at least 1 inch of water.
  • When the water returns to a full boil, process for 10 minutes.
  • Transfer jars to a wire rack away from any draft to cool completely, about 12 hours. Store in a cool, dark area.
