Ahhh summer….. my favorite time of the year! The warm weather gives me the opportunity to have my windows open to let some fresh air in… Wearing light clothes and my open-toed sandals (yeah so… I love them!). The smell of fresh cut grass… The taste of fresh produce! Did someone say fresh produce?
 
During the high season, I can’t get enough fresh produce. I eat them raw, steamed, grilled and sautéed. I like to mix them up in colorful combinations and love to see a rainbow of color on my plate which by the way, is not only a healthy eating habit, it also provides a wide variety of vitamins and nutrients.
 
Going to the farmers markets is probably one of my favorite things to do all year round but more so during summer. Just to see the wide variety of fruits and vegetables gives me so many delicious ideas to create new, healthy recipes!
 
Years ago, David and I wanted to make something simple and healthy without adding too much besides the vegetables. This is how our Vegetable Medley was created. This recipe is simply a bunch of vegetables sautéed together in a harmonious and healthy way. Only a little butter and pepper is used and the rest is from mother nature.
 
Many times the simplest things in life can be the best just like in this Vegetable Medley! Like they say… “don’t judge the book by its cover” or “don’t knock it until you’ve tried it” because this is an amazing way to savor your vegetables!
 
Although it’s very, very simple, the combination is awesome! As I mentioned, sometimes simplicity is the best choice and you’ll find it in this awesome Vegetable Medley! Let’s not waste any more time and let’s get cooking!

Vegetable Medley

Simple, fast and healthy, this side dish will become a family favorite.

Ingredients
  

  • 2 tbsp. butter tips & tricks
  • 1/4 large red onion, sliced (Lyonnaise cut) tips & tricks
  • 1/2 large red pepper, seeded and sliced
  • 1/2 large orange pepper, seeded and sliced
  • 1 medium zucchini, sliced
  • 5-6 medium mushrooms, sliced
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 2 tbsp. sesame seeds, or to taste

Directions
 

  • In a large skillet over medium heat, melt butter. Add onion slices and cook until translucent. Add red and yellow peppers; cook for 3 minutes.
  • Add mushrooms and zucchini; season with pepper. Sauté until vegetables are tender. Sprinkle with sesame seeds.
