Raspberry Vinaigrette

When I was at university, I was on a serious budget and was eating lots of salads and other inexpensive foods. Buying a bottle of salad dressing or vinaigrette was a “hard” decision because, first I could only afford one and second, I’ve always been the type of person that loves variety so buying just one wasn’t fun!
 
This is when I decided to start making my own vinaigrettes so I could enjoy different flavors. Later in life I started experimenting with dressings but that is for another episode. I remember the first couple of vinaigrettes I made were not a hit… They were oily, greasy and tasteless. Then I started adding more ingredients until I started to understand the nuances of making them which by the way is very simple.
 
The Raspberry Vinaigrette recipe I’m about to share with you is not one of my first experiments – lucky for you… lol! It’s one that I have developed over the years and only experimented with on my closest friends. If you wonder, yes, they are still my friends… All joking aside though, I love making this one during the summer time because it’s light and “summery”. C’mon there’s raspberries in it, so it’s clearly a summer vinaigrette!
 
Quick and easy to prepare, this Raspberry Vinaigrette tastes so “fresh”! The use of Raspberry Jam gives it some body. You can always throw in some fresh raspberries and mash them up slightly for a better consistency. I also use honey in my recipe to add some sweetness to the vinaigrette. Although I use this vinaigrette all year round, summer seems to be the best time to enjoy it. It’s light, tasty and fresh… exactly the way summer food should be!

Raspberry Vinaigrette

Although this homemade vinaigrette is quite popular during the summer months, this can be enjoyed all year round...!

Ingredients
  

  • 1/3 cup grapeseed oil tips & tricks
  • 1 1/2 tbsp. raspberry vinegar
  • 1 tsp. honey, or more to taste tips & tricks
  • 2 tsp. raspberry jam see Recipe
  • 1 tsp Dijon mustard
  • 1/2 tsp. red onions, finely chopped
  • 1/2 tsp. poppy seeds
  • 1/8 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)

Directions
 

  • In a large measuring cup, whisk together grapeseed oil, raspberry vinegar, honey, raspberry jam, Dijon mustard, red onions, poppy seeds and freshly ground black pepper. Pour over the salad and toss well.
  • If desired, add 3-4 fresh raspberries in the vinaigrette.
