December can be an insanely crazy and busy month! Although Christmas falls on the 25th each year (I’m pretty sure I’m right on that one… lol), we manage to run, rush, and panic just to be ready for the big day! Of course we like to blame it on “not having enough time”. Of course it has nothing to do with mismanagement of our precious time. We could’ve started doing our shopping… let’s say in October and started cooking last month. But noooo, let’s leave everything for the last minute… sound familiar!
 
All right enough sarcasm… you get my point! So what to eat and cook when we don’t have enough time on our hands?
 
The recipe I’m about to share with you is not one of my creations. I actually saw it a few years ago on “My Recipes” website and it’s called Orzo with Chicken & Asiago. I haven’t really changed it much besides increasing the amount of chicken broth and using less water, adding some cayenne, eliminating salt and definitely raising the amount of asiago cheese – yes, yes my nickname is Minnie Mouse, remember?
 
The great part about this Orzo with Chicken & Asiago recipe is that it’s a one-pot meal. It’s quick and easy to make and within 25 minutes, you have yourself a great dish. We eat this often at home when I don’t feel like cooking… yes, it even happens to miss Frankie here!
 
There’s no excuse for not cooking a decent meal at home with this easy recipe. Get yourself a good quality Asiago cheese and you’re good to go. Take 25 minutes out of your crazy schedule and give this Orzo with Chicken & Asiago a try!

Ingredients
  

  • 1/2 cup cold water Footnote
  • 2 1/2 cups low-sodium chicken broth
  • 12 ounces (about 2 breasts) chicken breasts, cut in 1-inch pieces
  • 1 1/4 cups uncooked orzo pasta
  • 1 cup frozen peas, slightly thawed
  • 1/4 tsp. dried rosemary
  • 1/4 tsp. dried basil
  • 1/4 tsp. dried oregano
  • 1/8 tsp. cayenne pepper, or more to taste
  • 1/2 tsp. freshly ground black pepper (I always use mixed peppercorns)
  • 1/2 cup grated Asiago cheese, or more to taste, divided

Directions
 

  • In a 4-quart pot, combine water and broth (*see footnote); bring to a boil.
  • Add chicken and pasta; bring back to a boil. Reduce the heat to medium-low, add peas, stir and simmer gently for 12 minutes; stirring occasionally.
  • Add rosemary, basil oregano, cayenne and black pepper; cook for another 3 minutes.
  • Turn off the heat and stir in ¼ cup cheese; taste and adjust seasoning if necessary. Serve immediately and sprinkle on more cheese.

Notes

Footnote: For even more flavor, use all chicken broth and skip the water...
