Ahhh, summer! I wouldn’t have any problem living in a place where the weather is warm all year round. Okay, maybe a place with a fall season – I love it when the leaves change color, it’s so pretty!
 
Distracted again… lol! As I said I enjoy warm weather but the only downside is that I feel lazy when it comes to cooking. I don’t want to eat something heavy and need it to be easy to prepare.
 
A protein I enjoy all year round but particularly more during the summer time is fish. It’s light and filling at the same time. It takes next to no time to cook and can be grilled on the BBQ – no need to heat up your kitchen with the oven on!
 
There are so many varieties of fish to choose from. I’ve tried quite a few so far and I love them all but the one I want to talk about today is blue marlin. This fish is sooooo good!
 
The first time I experienced Grilled Marlin Steaks was when we went to Hawai`i where they call it A`u (the Japanese name for it is Kurokajiki or commonly known as Kajiki). Firm texture with mild flavor, blue marlin can be prepared many ways and it’s also magnificent for sashimi. It’s low in saturated fat & sodium, rich in vitamin B6, B12, niacin, selenium, iodine, magnesium and also a good source of omega-3.
 
For some of you who don’t like the “fishy” taste of this protein group, blue marlin is your answer. This grilled marlin version will make you want to eat this beautiful fish more often. I like to serve my Grilled Marlin Steaks with my Jicama Mango Pepper Salad… these two pair very well together! If you don’t have access to a BBQ, baking it is also a very delicious option.

Ingredients
  

  • 2 large blue marlin steaks, about 3/4-inch thick
  • 1/3 cup pineapple juice
  • 2 tbsp. grapeseed oil tips & tricks
  • 2 tbsp. sesame oil
  • 1/2 tbsp. low-sodium soy sauce
  • 1 large clove garlic, minced
  • 1/2 tsp. fresh ginger, minced
  • freshly ground black pepper, to taste (I always use mixed peppercorns)

Directions
 

  • In a small bowl, combine pineapple juice, grapeseed oil, sesame oil, soy sauce, garlic, ginger and black pepper. Whisk all the ingredients until well blended.
  • Put marlin steaks in a large re-sealable bag and pour the marinade over. Close the bag and massage/flip it until the steaks are well coated. Transfer to the refrigerator for 1 to 1 ½ hours, turning and massaging steaks once or twice.
  • Preheat barbecue to 500-550ºF.
  • Place the marlin steaks on a plate and discard the marinade.
  • Transfer the steaks on the hot grill, close the lid and grill for 3 minutes on one side. Flip them and cook for another 2 minutes with the lid closed.

Notes

Footnote: If your steaks are thinner or thicker than 3/4-inch, you might want to adjust cooking time slightly.
